How do I make the "Next" button (that is generated within the article-page display automagically by the template's code) follow the menu entries rather than the article's ID number?

Sorry to say by default I don't believe this option to be available within Joomla. There is no override for the pagination within the template so the default Joomla pagination is been used. You could try creating your own override (https://docs.joomla.org/Understanding_Output_Overrides#Pagination_Links_Overrides) however I am not even sure what you request is even possible. Your only option may be to order your article IDs in the same sequence as your menu items.
