I haven't done anything with Joomla for many years and now with Joomla 4 I'm starting from scratch again.
I want to build a site based on Magnolia and have installed the demo installer.

In the styles I have loaded in J51_Magnolia - Default an own logo. But I don't see any change in the frontend. What can be the reason for this?

What is actually the best way to proceed, do I just change the demo install piece by piece, or do I make a copy and change it?

you have to take the right style. For the main page, the style: "homepage" is usually the right one. The other subpages are influenced by the "default".
But I don't know your template.
If you click on the respective style, you can see where this style is used under "Menu assignment".

If you work with the style, your changes should be Template update and Joomla update safe.
